Wine description
Strong ruby ​​red with dark reflections; inviting bouquet of dark berries and cherries; dark berry-fruity on the palate in combination with a very fine, grippy tannin; appears present and powerful with a very good length; a real witch's drink.

Our Onyx is a classic French-style red wine cuvée made from Cabernet Sauvignon, Merlot, and Cabernet Franc.

In the glass, it presents itself in a deep dark cherry red; the bouquet reveals berry aromas of blackberry and cassis paired with spicy components such as paprika, pepper, and tobacco; on the palate, it presents a voluminous and multi-layered body with fruit and spice as well as well-integrated tannins; complex, powerful, and with great potential. An intense taste experience.

With wise foresight, the best of the vintage was kept back and set aside in the cellar. The aim was to create a Pinot Noir red wine reserve that would still be a pleasure to drink and enjoy even after 10 years or more. The Collection Royal Pinot Noir red wine Réserve is an aristocratic majesty, grounded in its homeland, matured for a long time and able to show its full richness and strength. It is powerful with a dense mouthfeel and aromatic length, yet gentle with plenty of warmth and spice.

In the glass, it is a deep dark black-red with violet reflections; the bouquet is a concentrated aroma of dark berries combined with strong, spicy tobacco components; on the palate, it reveals an opulent tannin structure paired with blackberries and elderberries as well as influences of leather and oak; powerful overall impression.

Vinum Nobile Riesling is one of our flagship Rieslings in the restaurant industry. The king of white wines brings all its nobility to the glass, presenting itself as elegant and racy, but not cool, rather friendly and with a beautiful harmony of fruit, acidity, and minerality. The cool night winds from the Black Forest heights, alternating with the late autumn sun during ripening, give it its special character, shaped by the terroir.

As the origin and home of the Hex vom Dasenstein, this vineyard site, which shapes the character of the village, is home to a rock formation that can be seen from afar: the Dasenstein. What can be seen on the surface as an impressive rock is also found underground. This is primary rock weathered soil par excellence, which gives our Riesling incredible minerality and tension.

In the glass, it appears light yellow with bright reflections; on the nose, there are pronounced yellow fruit aromas of vineyard peach and apricot; on the palate, it is powerful, with beautiful fruit accompanied by lots of power and pressure from the mineral acidity; very expressive, everything from a single mold and harmonious, a great and elegant wine.

Characteristics:

Our winemaker's sparkling wines are matured using classic bottle fermentation with great care and sensitivity. This Pinot sparkling wine brut is a pure child of the “Hex”! The production process, from the grape to the finished sparkling wine, takes place in our historic wine cellar. Carefully selected Burgundy grapes with a fresh acidity structure are specially processed for this purpose. Slow, cool fermentation of the sparkling wine base at 14–16 °C, followed by traditional bottle fermentation with yeast storage for at least 12 months. The completion and separation from the yeast takes place in small batches in order to offer particularly fresh sparkling wines. Fruity aroma of apple and green pear underpinned by fresh notes of lime; fresh, fruity, and creamy on the palate with a fine, sparkling mousseaux.
