About us

We have been growing our own wines naturally since 1997. At that time, the family already had some excellent vineyards and a certain yearning for great Burgundy wines. Over the years, we have developed a clear Martin Waßmer style that is characterised by Burgundy but is completely independent, giving all our wines a fine character and reflecting the respective terroir. The clear character, however, is provided by vines and sites up to 40 years old, such as the Dottinger Castellberg, Schlatter Maltesergarten, Staufener Schlossberg, Ehrenstetter Ölberg, Auggener Letten, Achkarrer Schlossberg and the Glottertäler Roter Bur.

Once you have committed yourself to the Burgundian style, you will not stop at the cellar. The planting density and low yields alone are similar to the work of the renowned domaines in Burgundy. We also only use barriques from the best Burgundian coopers in our cellar. The slow maceration takes place after spontaneous fermentation in open, wooden cuves. The wines then mature in barriques for up to 18 months. Wines that we would like to drink ourselves need time and tranquillity. We offer them precisely this tranquillity. The fact that this is now even better is due to our new winery building, which we were able to inaugurate in 2016.

The winery is currently in the process of converting to organic viticulture. The focus is on natural and environmentally friendly cultivation, which not only benefits the environment, but also the quality of the wines.

Still Wine
Champagne & Sparkling Wine

If you want to be dedicated to the true Burgundian style, then you can pull no punches in the cellar. Our high plant density and low yields mirror the conditions and ethics of the renowned growers of Burgundy. We also buy our barriques from the very best coopers Burgundy has to offer. Wild yeast fermentation occurs in open wooden vats, followed by extended maceration and 18-months barrique aging. The sort of wines we like to drink need both time and patience – two things that we are really good at. To make the process flow more smoothly, we opened a new winery in 2016.

The special terroir with chalky soil and the contrast between warm daytime temperatures and the cooling air currents of the Black Forest at night characterise this Pinot Blanc. Light golden yellow in colour. Expressive nose with aromas reminiscent of vanilla, roasted hazelnut, ripe apricot and quince. Slightly exotic fruit flavours of mango and papaya in the background. Powerful on the palate with a delicate texture, fine acidity, juicy character and good aromatic length. Herbal spice and fine toasting on the finish.

Markgräflerland Grauer Burgunder >SW<

Medium-dense yellow with greenish reflections. Reminiscent of vanilla, caramel, Williams pear and candied pineapple. Juicy fruit, paired with a fine acidity and a creamy melt.

Markgräflerland Chardonnay >SW<

This Chardonnay is light yellow in colour with light green reflections. Its fine nose with a slightly smoky flavour is carried by rich fruit such as Cavaillon melon, ripe pear, candied lemon peel and a background of vanilla and mild spices. Light aromatic herbs in the background. Typical juicy, fresh Chardonnay with a good mouthfeel, fine fruit that quotes the nose, elegant acidity and mineral freshness. Good density and length.

Schlatter Spätburgunder >SW<

Ripe ruby red in colour with garnet reflections. Aromatic character, chocolate, cassis, some cherry and dark berry fruit in the background. Clean, spicy, well-structured on the palate, good medium density and length. Clove and aromatic herbs on the finish, restrained fruit.

Dottinger Castellberg Weisser Burgunder >GC<

A pale yellow wine with light green reflections. Very elegant and complex nose with great freshness. Ripe apricot and apricot kernel, juicy pear, subtle star fruit, white flowers and a hint of mandarin zest in the background. Very fine roasted notes, some flint and mild spices. Complex and elegant with a lasting character, good depth, plenty of freshness and fine fruit, fine toasting and delicate minerality. A great wine with a creamy texture and excellent length.

Dottinger Castellberg Grauer Burgunder >GC<

Medium-dense yellow colour with light golden reflections. The nose reveals elegant fruit, candied orange zest, some tangerine and dried pineapple, ripe apricot, fine toasted notes and subtle white flowers in the background. Finely structured acidity on the palate, elegant yet powerful character, carried by juicy fruit and a hint of quince jelly.

Dottinger Castellberg Chardonnay >GC<

The Castellberg has a rich yellow colour with light green reflections. A lingering aroma, fine roasted notes, roasted hazelnut and vanilla, carried by ripe fruit, juicy pear, some apricot and quince as well as a hint of lemon zest. Elegant floral notes and a hint of flint. Juicy and aromatic on the palate with a fresh character, great elegance and depth, multi-layered with ripe fruit, fresh citrus notes, delicate toasting and excellent length and a hint of mace blossom on the finish.

Ehrenstetter Ölberg Spätburgunder >GC<

This wine sparkles in the glass with an intense ruby red colour and violet reflections. Expressive and multi-layered aroma, fine raspberries, some blackberry, subtle sour cherry, wild strawberries and a hint of beetroot. Juniper, elegant roasted notes, mild spices and a hint of aromatic herbs in the background. Well-structured with elegance and depth, juicy fruit, fine, almost nutty, chalky minerality, well-integrated tannins and excellent length.

Schlatter Maltesergarten Pinot Noir >GC<

The Schlatter Maltesergarten has a clear ruby red colour with light purple reflections. The elegant aroma has a fine fruit, some sour cherry, raspberry and black cherry as well as subtle blackberry. Light notes of dark chocolate, fine toast and balsamic spices. Juicy fruit on the palate, fine spice, ripe tannins and elegant acidity. A fine but persistent wine with excellent length and a slightly chalky minerality on the finish.

A clear ruby red colour with light violet reflections. Aromatic with ripe fruit, blackberry, wild berries, black cherries, slightly smoky-mineral flavour. Fine roasted notes and a hint of cocoa in the background. Well-structured on the palate, juicy fruit, fine earthy mineral tones, well-integrated tannins, mild acidity, good aromatic depth with mild spices on the finish. Great wine, a sleeping giant.
